Before switching to a low-carb lifestyle, pasta was one of my favorite, go-to meals. So much so that I was eating it up to three times per week. Naturally, that doesn’t fly on Keto.
Very recently, I became aware of a little something called Slim Pasta, and at 11 calories, and 0g net carbs per 125g serve, I couldn’t not try it.
I felt like a pesto and was fortunate enough to have a jar on hand. For anyone who isn’t familiar with pesto, it’s basically pine nuts, parmesan cheese, olive oil, and basil.
It’s so simple that anyone can cook it.
Before you do anything, put some garlic and oil in a pan and simmer it lightly.
While that’s happening, dice the chicken up into whatever size floats your boat.
And place it in the pan, mixing it around until it looks like this
Add in the pesto, stir through, then add the cream.
I wanted mine to be very rich and very creamy, and truth be told, with an entire jar of pesto, there isn’t much option there, but in any case I decided to reduce the cream down a little.
Rinse the pasta
Put it in hot water (not boiling) for one minute.
Drain, and then toss it into the pan
So the smell has probably found its way through your house, and thus, it’s time to eat.
The SlimPasta is pretty great, it’s as close as one can reasonably expect to get without bringing wheat into the equation. I’m definitely going to be using it again for this, or something similar, because it really hit the spot and quelled a long time craving
